METHOD

Place the gin, freshly squeezed lemon juice and syrup into a cocktail shaker filled with ice. Shake hard to chill. Strain into a chilled coupe glass and top up with Champagne.

INGREDIENTS

Fok Hing Gin (30ml)
​Freshly Squeezed Lemon Juice (15ml)
​Simple Syrup (10ml)Brut Champagne (60ml)

Tip: Prosecco or Cava work equally well, if your Champagne cellar is empty.
